Seafood Jambalaya

Ingredients:

  • 1 tablespoon oil
  • 1 tablespoon flour
  • 1 cup crab meat
  • 1 cup small oysters
  • 1 cup shrimp, raw
  • 3 ounces tomato paste
  • 1 onion, chopped
  • 1 small green pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon parsley, minced
  • 1 teaspoon Lea & Perrins
  • ½2 teaspoon salt
  • ½ teaspoon cayenne pepper 1 teaspoon powdered thyme
  • 1 ½ cups rice, cooked

Directions:

  1. Make a roux with oil and flour, stirring until a deep brown in color.
  2. Add crab meat, oysters, shrimp, and tomato. Cook for 5 minutes.
  3. Add onions, pepper, and garlic that have been sautéed in butter.
  4. Add remaining ingredients and cook for 20 minutes.
  5. Serve in a rice ring.
